Cake of the Month - Elderflower Drizzle Cake

It is elderflower time in Worcestershire.
Yesterday I picked some flowers and started off my elderflower cordial.
While I was finishing it off this morning I remembered that I hadn't made a cake for May.
What could I make that would be simple, quick and seasonal?


I used Mary Berry's recipe from her Ultimate Cake Book replacing the lemon syrup topping with a liberal dousing of elderflower cordial. It is a very moist cake, not lunchbox material but excellent for an elegant pudding especially if you happen to have some stewed gooseberries to serve alongside. And maybe some cream.


Elderflower Drizzle Cake

In a bowl beat together well;
4 oz (110g) soft butter
6 oz (165g) self-raising flour
6 oz (165g) caster sugar
2 large eggs
4 tablespoons of milk
1 teaspoon of baking powder
the zest of 1 lemon

Scrape into a greased and base-lined 7-8 inch loose-bottomed cake tin.
Bake at 180°c (160°c fan oven) for 35-40 mins.
Leave it in the tin and while it is still hot pour over
200-250 ml of undiluted elderflower cordial (homemade or bought)
Finally sprinkle with 
1-2 tablespoons of sugar
Leave to cool.

  1. The elderflower in our garden is not quite ready so I'm hoping it won't rain in the next day or so. Cake sounds lovely, I've just tried a great recipe that uses 0% fat yoghurt and ground almonds instead of butter - great for husband who needs a low fat diet. It has similar crunchy sugar topping.

    1. Oh dear! Ours never gets the chance to explode as we drink it pretty quickly and I freeze what we can't drink straight away.

  4. mmm, I made a elderflower drizzle last year and it was lovely. after 2 days of rain the elderflowers round here are looking rather soggy.......

  8. Lovely! I was eyeing up the elderflowers in the garden at the weekend ... though it seems a lot of fiddlefaddle when you can buy it. It was the little black insects that put me off last time, but that's London elderflowers for you!

    1. Honestly Mary it really is easy peasy. Ours didn't have too many insects, they just needed a quick shake. I turn a blind eye to insects to be honest. You just cover the flowers with boiling water, leave overnight, then strain, add sugar and lemon juice, heat to dissolve the sugar and bottle.

  10. Absolutely elegant! To get rid of insects on the elder, I place the flowerheads in some caster sugar--the tiny insects march out to sweeter pastures! I don't like washing them as I always feels it takes some of the fragrance away. Also, I'm not terribly squeemish about a few little bugs. Maybe I should be ;0

  15. Wow that looks delicious - I want to have a go at elderflower cordial. My husband always makes elderflower champagne (always a risk, does soetimes explode!). We love the fizz and put up with the slight cat pee smell of the flowers in the process!! xx

  20. elder trees are not common in australia but i planted one a few years ago with a view to making elderflower cordial..so far i haven't had enough flowers all at once to do anything with them..your cake looks like just the sort of delicious treat i'd like to make when i have some elderflower cordial..i know i could buy it but it just wouldn't be the same..jane

  23. Oh my! This looks totally wonderful! I like the frothy addition of the elderflower blossom! How do you expect my spring diet to work if you put up things like this and I adore baking?! I have no family around to help me eat my baking creations... so end up freezing most of my cakes - though it comes in useful when somebody comes and I can defrost something homemade in a jiffy!

  24. I've just read your recipe for elderflower cordial. I haven't much space in our freezer. How much tartaric acid is needed for that quantity of cordial please? I've got some nice (smallish) bottles that I've saved for making cordial.

    I used this recipe for a cake bake competition at work last week. I dont really bake so I found this a really easy cake to make and tasted delicious. I even went out and collected Elderflowers to decorate! Got really good feedback on it. Yum Yum
